He moved to Edinburgh in 1985 where he worked at Cosmo restaurant in Castle Street until 1990. He then moved to take the position of Head Chef at San Marco Restaurant in Stockbridge. After many years of catering experience, Giovanni decided to venture out and open La Bruschetta Restaurant in August 2002.
