We are often asked about our providers and our effectiveness in using locally sourced produce, its provenance and supply chain. Our meat providers are Sykes House Farm, a 3rd generation family business based in Yorkshire. Their prime beef range is hung as whole sides for a minimum of 14 days and then quartered and hung for a further 14 days, making 28 days in total. Sourcing of pork is the finest the region has to offer – Yorkshire Outdoor whose farms operate to RSPCA Freedom Foods Standards. Their poultry is barn and free range reared under the Farm Assured Scheme. Their lamb is reared in Yorkshire and hung for 10 days to enhance its tenderness.
