I have always been attracted by the Sicilian history because of its variety and richness. In the past, many people from different parts of the world (Phoenicians, Greek, Arabs, Normans, Spanish, French) have ruled in Sicily, leaving a strong impact on the local culture and traditions, including cuisine, |n fact,  Sicilian cuisine has many elements coming from the Arabic  tradition, and its dishes are flavoured  with several spices, such as pepper,  basil, oregano, nutmeg, saffron.

In the past, recipes were handwritten on small pieces of paper or transmitted orally to the next generation, and everybody learnt how to cook by watching their grandmothers. Some time ago I found an old scrapbook handwritten by one of my ancestors, well-known for her culinary skills with typical Sicilian recipes. Since then, my love for Sicily and the curiosity about these old and genuine dishes have made me become passionate about Sicilian cuisine. With my dishes, I now try to retain as much as possible of the traditional ingredients, among which the use of spices and the sour-sweet condiments typical of many Sicilian preparations.
